Recipes: Game Time Meatballs

Pam’s Meatballs

Pam’s Game Time Meatballs

My sister makes the best meatballs for Sunday game time. Whither it’s football or in our house NASCAR racing, these meatballs make for a great addition to any coffee table feast!

Several times during football season you could walk into the house and be greeted by a wondrous smell of barbecue and fresh baking bread. You can have them in a bowl, on a sub or slice them up and try them as a dip with your favorite Tostitos chips.

If you’re interested in a more barbecue version of meatballs, try my Race Time Meatballs.

How ever you like your meatballs, you’ll like these!

Preparation Time:

20 minutes preparation,
90+ minutes cooking time

Ingredients:
You’ll need a cookie sheet and a crock pot for cooking.

  • 2 lb hamburger
  • 1 cup plain bread crumbs
  • 1/3 cup ketchup
  • 1/3 cup parsley
  • 2 tablespoon soy sauce
  • 1/4 teaspoon garlic (optional)
  • 2 tablespoon minced onion
  • 2 eggs

Sauce

  • 2 14oz cans Jellied Cranberry Sauce
  • 2 12oz jars chill sauce
  • 4 tablespoon brown sugar
  • 2 teaspoon lemon juice

Directions:

  • Pre-heat oven 375° F
  • Turn your crock pot on high and add the Jellied Cranberry Sauce. Slice up the jelly into smaller bits so it can melt quicker and easier in the sauce.

Meatballs:

  • Mix all the meatball ingredients together in a large mixing bowl.
  • Knead the mixture together until everything is fully combined into the meat.
  • Mold into meatballs about 1 inche in diameter (a hand-held large meatball maker is perfect for this).
  • Place the meatballs, about 1 inch apart, on a cookie sheet and place them in the oven for 20 minutes until brown.
  • While they’re cooking, prepare the rest of the sauce.

Sauce:

  • Combine the remaining sauce ingredients into the crock-pot, and thoroughly stir mixture.
It’s ok if the Jellied Cranberry is a little chunky. It will smooth out during cooking.
  • Once your meatballs have browned in the oven, drain any excess grease and add the balls to the sauce in the crock-pot.
  • Gently fold the meatballs into the sauce so as not to break your meatballs apart.
  • Check on your pot every 30min, each time gently fold the meatballs into the sauce.
  • Cook on high for 60 to 90 minutes.
Cooking time will depend on your crock pot and how much you want the sauce to soak into the meat.
