Garden Salad with Chicken

Garden Salad with Grilled Chicken

Vickie’s Garden Salad with Seasoned Chicken

Everyone in my extended family had a vegetable garden. It wasn’t unusual to sit at my grandmother’s dinner table and see a plate of freshly cut tomatoes, or cucumbers next to the main meal.

There was always room for a salad on my Maw Stoots’ table for lunch. She loved garden salads and always fixed one for me when we were in Tennessee for a visit.

As you grow older, your taste buds change. You learn to enjoy the variety of flavors in foods of all kind. And that’s how my Garden Salad with Chicken came about. They’re scrumptious for dinner or lunch.

Momma’s Sweet Jack BBQ Sauce

Momma’s Sweet Jack Sauce

Garrett’s Momma’s Sweet Jack Sauce
Unlike men in the house, I can’t handle a lot of “hot” foods. So Gary decided to try his hand at making a home-made mild sweet bar-b-que sauce just for me.

We had gone to a local steak house in Virginia who serve their own version of a Jack Daniels bbq sauce. It was nice, but way to hot for me. I was fairly disappointed, because it truly smelled so GOOD. That inspired Gary to make a new sauce.

It goes great on chicken, beef and everything in between!

Preparation Time: 1¼ hours
Makes a bit less than 12 oz.

Wide Awake Jack Sauce

Wide Awake Jack Sauce

Garrett’s Wide Awake Jack Sauce
During the last holiday season, we gave Gary a book about grilling. It has some wonderful recipes. But it also inspired the Grill Master to try his hand at making some home-made bar-b-que sauces.

I like sweet sauces, the boy child loves hot sauces. And Dad, well he’s fond of tart sauces similar to what you’d find in his home state of North Carolina. Needless to say there has been a lot of experimenting going on in our house on the weekends.

He has been working on this one for a few months now. I think he’s  finally gotten it just right. If you like hot, you’ll like this one.

NC BBQ Cole Slaw

Granddaddy Holland’s NC BBQ Cole Slaw

BBQ Coleslaw

I’ve heard many stories about Gary’s side of the family going to Love Valley in North Carolina to visit their grand parents. One of the stories I often hear about are the bbq dinners with Granddaddy’s special Cole Slaw. It became a family tradition and even a family secret.

Sadly, Granddaddy Holland passed away before passing on his secret recipe that everyone loved so much. But cousin Kevin has been working on that recipe for a number of years and everyone has told me he has recreated it quite well.

Like a lot of North Carolina bbq, this slaw has a vinegar base.

Preparation time: 10 minutes or 2 days.
This is best when made 2 days ahead of meal time, so flavors have time to blend.  Continue reading
