Vickie’s Bite Size Beef Bites

We came up with this recipe for a cold February Super Bowl game. It’s quick and simple to fix. And they adds a whole a lot of Italian flavor at the table.

Beef Bites are my version of Gary’s Speedies, which can be a little spicy for me. I call these the plain version for beef. But you can make this with any meat. Chicken, pork, or even venison.

They can be served as a main dish or as a warm appetizer for that fall football game. They’re even good for that summer tailgating at the races too.

Preparation Time: 15 minutes, plus 1 hour in the fridge
Cooking time: Approx. 20 – 40 minutes

Ingredients:

  • 2 lbs London Broil mostly thawed
  • ½ tblspn salt
  • ½ tspn pepper
  • 1 tblspn Dalmatian Sage
  • 1 tblspn Oregano
  • ¼ cup extra virgin Olive oil
  • 2 tblspn Worcestershire sauce
  • ½ small onion – chopped
  • 3/4 cup (or 1 can) diced tomatoes

Directions:

  • In a small mixing bowl, combine the dry ingredients and mix them together well.
  • In a larger medium size mixing bowl, combine the wet ingredients and mix them together well. Add the onion and tomatoes to this mix.
  • Sprinkle the dry seasoning, into the larger mixing bowl and fold the spices into the wet mixture. This will help you have an even coating of seasoning on the beef cubes. Set this bowl aside for a moment.
  • Cut the beef into 1 inch squares.
    This is easier to do when the beef is just a little frozen in the middle.
  • Place the beef cubes into the seasoned sauce.
  • Once you have all the beef cubes in the sauce, fold them over each other to coat the meat.
    Make sure each beef cube is covered with the oil and spices.
  • Place the bowl in the fridge to soak in the sauce for about 1 hour.
  • After an hour, Pre-Heat the oven to 400° F
  • Remove the beef from the fridge and spoon the bites onto a large square cake pan, or a roasting pan. You can place the bites together in a group, and then pour the remaining seasoning evenly over the bites.
  • Place the pan in the oven and bake for approximately 20 minutes, remove from the oven and flip the bites over to ensure beef remains covered with liquid.
  • Bake for another 15 to 20 minutes.
  • Remove from the oven, and serve hot.
Alternatives:
  • Make “Texas Beef Bites” by adding roasted red peppers.
  • Add a jar of tomato or Alfredo sauce and serve over your favorite noodles.
  • Try browning the beef bites before soaking them in the mixture. It adds a touch of flavor. But decrease the cook time in the oven by 15 minutes.
